Lately I’ve been experimenting with AIP “dairy”. I made AIP yogurt with and without the InstantPot, I found an AIP sour cream replacement and recently I really wanted some cream cheese with lox. All these recipes are made with coconut cream, a few simple ingredients and usually an overnight in the fridge. But this morning I didn’t have any made so I decided the forego perfection and ideal texture and I whipped together a quick dairy replacement cream which was perfect with my breakfast and by the spoonful.

Quick AIP Dairy Replacement
1. Scrap the cream off the top of a can of coconut milk. (Try to use ones without gums, just water and coconut on the ingredients.)
2. Squeeze in a quarter wedge and a half of lemon juice (pulp makes it better!). About 1 tablespoon for this mini bowl…or enough juice to cut the coconut flavor on taste.
2. A pinch of sea salt.
3. Two probiotic capsules for good measure!
4. Mix and eat!
I added it to my smoked salmon and then realized I just wanted to eat this by the spoonful (with a drizzle of honey )
