Coconut Banana “Latte” (Warm Shake)

This is the perfect way to start your day with a dose of healthy fats and no caffeine or added sugar! When my blood sugar was still stabilizing, this "latte" would always help keep off the hypoglycemic headaches that would come around midday.

  • Yields: 3 servings

Ingredients

2 bananas

1 can full-fat or reduced fat coconut milk (only ingredients coconut or water)

1 c water

1 teaspoon cinnamon

1/4 teaspoon ground cloves

1 teaspoon vanilla extract, optional- omit for AIP

1/8 teaspoon nutmeg, omit for AIP

Directions

1Blend the coconut milk, water, bananas, spices and vanilla extract, if using. Make sure you blend enough so that the "latte" is purely liquid, with no banana chunks remaining.

2Either heat up over the stove in a medium saucepan, or microwave a cup at a time (I usually microwave 1 min to 1 min, 30 seconds).

3Enjoy!
